4 cups all purpose flour
2 teaspoons salt
1 cup shortening
1 cup milk
16 ounces of dried peaches or apples
1/2 cup sugar
1/4 cup powdered sugar
Crust: Mix together flour and salt. Cut in flour using a fork or your hands until mixture is crumbly. Add milk and stir until dough forms into a ball. Wrap ball in Saran Wrap and place in refrigerator for an hour. Roll out dough and cut into rounds. (about 6")
Filling: In heavy saucepan add dried fruit (apple or peach) sugar and enough water to cover. Cover and cook over low heat until fruit is tender. Remove lid and cook off water.
Heat oil over medium heat in skillet with high sides (I prefer cast iron). Spoon filling into center of dough rounds, fold over dough and seal with a fork.
Fry until brown on both sides.
Cool on baking rack and sprinkle with powdered sugar. (optional I prefer mine without sugar and served hot with melted butter)
